木糖醇是一种天然存在的五碳糖醇，广泛存在于果品、蔬菜、谷类、蘑菇等食物之中，是所有羟基化合物中嘴甜的。与日常的蔗糖相比，木糖醇的甜度与之相仿，但熔解热几乎大了10倍，而热量度却比蔗糖少了40%。因此木糖醇是糖尿病人的安全甜味剂、营养补充剂和辅助治疗剂。


木糖醇是从玉米芯、甘蔗渣等物质中提取的、**的新型甜味剂，甜度相当于蔗糖，外观为白色结晶或结晶性粉末，极易溶于水，微溶于乙醇和甲醇，熔点92～96℃，沸点216℃，入口时有强烈的清凉感。
