水飞蓟素是由菊科药用植物水飞蓟种子经科学方法精制而成的一种黄酮类化合物。其主要成份为水飞蓟宾、异水飞蓟宾、水飞蓟宁、水飞汀等。它具有能改变肝细胞膜、改善肝功能的作用。同时，还具有解毒、降血脂、利胆、健脑、清除人体自由基、抗质脂过氧化的作用。现在应用范围由预防、治疗急慢性肝炎，扩展到抗衰老，防治动脉粥样硬化等等方面。国外已经用它制做保健食品、保健饮料等。
提取方法：乙醇提取、乙酸乙酯提取、丙酮提取
