普鲁兰多糖简介

普鲁兰多糖是一种水溶性粘质多糖,成品为白色颗粒状固体。该多糖有两个重要的特性:结构上富有弹性,溶解度比较大。普鲁兰多糖的成膜性、阻气性、可塑性、粘性均较强,并且具有易溶于水、无毒无害、无色无味等优良特性,已广泛应用于医药、食品、轻工、化工和石油等领域。

普鲁兰多糖的生产原料主要是糖质原料,生产过程为生物转化过程及生化提取过程。

Pullulan is

natural water-soluble polysaccharide. Dry pullulan powders are white granular

solid. There are two mainly features of the product: structure of elastic, relatively

large solubility. Pullulan has the strong properties of film-forming, gas

barrier, plasticity and viscosity. It is easily soluble in water, non-toxic and

harmless, colorless, odorless, which has been widely used in pharmaceutical,

food, light industry, chemical and oil fields.

农产品及食品保鲜:

由于普鲁兰多糖具有良好的成膜性,可广泛应用于水果、蔬菜、鸡蛋、茶叶等农产品保鲜。普鲁兰多糖作为一种新型海产品被膜保鲜剂,能充分有效地抑制海产品体内挥发性盐基氮的大量积累,对海产品体内水分蒸发也有良好的保护作用。

film-forming function of pullulan can be widely used in the preservation of

agricultural products such as fruits, vegetables, eggs, tea. As a new type of coating

anti-staling agent, pullulan can be able to fully and effectively inhibit the

食品加工:

普鲁兰多糖可制成低热值人造米、人造面;糕点中添加部分普鲁兰多糖可提高其风味;在高档豆腐中与盐卤、葡萄糖酸内酯等共同保持良好的表面光泽度,并且有大豆香味,改善豆腐品质;在制造鱼糕时添加0.1%的多糖可增强其强度,保持原型;普鲁兰多糖对油炸食品、脂肪丰富食品具有良好的保鲜作用;火腿、火腿肠、速冻食品等用普鲁兰或衍生物喷涂成膜或普鲁兰膜袋包装,可保鲜、防腐,使保藏期增加4-5倍;用普鲁兰多糖作为微胶囊壁材,使调料及调味品微囊化,达到保鲜、保香的目的;在米、面、肉类加工使用,可防止加热时粘连,并增加蓬松度;利用其膜结性能和成膜性能在烤制食品上用于装饰性附料,防止开裂、保形,增加表面光泽;在口香糖类加工中添加l-4%普鲁兰,可改善产品的口感、延长咀嚼时间和香味;在无糖咀嚼胶加工中添加4%普鲁兰多糖,可增加延伸性和强度,不龟裂、耐咀嚼、保香、口感好,保存期长;在冰激淋生产中添加普鲁兰酯或普鲁兰,产品的滑润性能增强,风味好,口感好;在巧克力加工中使用普鲁兰多糖,成型性好,表面光泽、平滑,口味和风味优良;在果汁饮料中使用,可适度增加浓郁感,滑润,分散性好,稳定性增强;在高盐食品中添加,可起到增稠效果,使酱油、调味品、熬煮食品、腌菜等增稠、增光泽,防止离浆。

Pullulan can be

used to make the low calorific value of artificial rice and flour. It can

improve the pastry flavor. Pullulan together with bittern, gluconolactone can

maintain a good surface gloss in the top grade bean curd. Adding 0.1% Pullulan

can enhance the strength of fish cake. Pullulan has a good role in the

preservation of fried foods, fat-rich food. It can be sprayed on the ham and

frozen food to keep fresh and antiseptic which the preservation period

increases by 4-5 times. Pullulan can be use as microcapsule wall material which

makes the spices and condiments microencapsulation reaching the purpose of

preservation. Pullulan can prevent heating adhesions and increase bulkiness in

the processing of rice, flour and meat. Using the properties of film-forming

and membrane-bound, pullulan can be as decorative materials which prevent

cracking and increase surface gloss. 1-4% pullulan can improve the taste of the

product and extend the chewing time and flavor in the processing of chewing

gum. In the processing of sugar-free chewing gum 4% pullulan can increase the

ductility and strength, no cracking, chewy, aroma, tasting good and long shelf

life. Pullulan can enhance the smooth performance of ice cream which makes the

product taste good. In the chocolate processing pullulan has the property of

moldability which makes the chocolate surface gloss, smoothness and excellent

taste and flavor. It can also increase the richness and enhance the stability

in juice drinks. It will play a thickening effect in the high salt foods which

makes the soy sauce, spices, boiled food and pickles thicken, increase gloss

and prevent from the pulp.


烟草:

在卷烟生产过程中会产生一定量的烟末,烟末的综合利用对卷烟厂有较大的经济效益。目前我国普遍以羧甲基纤维素(CMC)做烟末的粘合剂,但CMC粘结成的烟丝有抗拉强度低、易潮解、易发霉以及有异味等弱点,从而降低了原有烟丝的质量。以普鲁兰多糖粘合而成的烟丝则具有能增加烟丝的芳香、减少尼古丁的含量、控制烟丝的湿度使之不易干燥、抗霉菌生长以及因其抗氧性而保护烟丝中有效成份不被氧化分解等特性,是有前途的烟草粘合剂。

Because of the

good water solubility, dispersion, film-forming, hygroscopic and non-toxic,

pullulan can be used as viscous filler in the cosmetic. It is much cheaper than

the hyaluronic acid.

在日本,普鲁兰多糖已用来作为水处理絮凝剂;经过研究与开发,已将该产品应用于高浊度水净化处理、城市污水一级强化处理及味精生产中废水的处理,形成了完整的工艺与技术。在废水中的投加量2mg/l,取得了较好的效果;将普鲁兰多糖用于水处理的絮凝条件及对几种原水和工业污水的处理效果
